Whole Wheat Cinnamon Crunch Banana Bread

Wet Ingredients:

2 large eggs

1 cup bananas, mashed

3/4 cup sugar

1/3 cup oil

1/2 cup Greek yogurt

Dry Ingredients:

2 cups whole wheat flour

2 tsp cinnamon

1 1/2 tsp baking powder

1/4 tsp salt

Crumb Topping:

1/2 cup flour (plain or whole wheat)

1/2 cup brown sugar

1 tsp cinnamon

1/4 cup butter


Pre-heat oven to 360 degrees. Grease 9” x 5” loaf pan. Whisk together all wet ingredients in a large bowl. Sprinkle in flour, cinnamon, baking powder, and salt on top. Gently fold in – do not over mix! For the crumb topping, place flour, brown sugar, and cinnamon in a medium bowl. Cut butter into pieces. With your fingertips, work in butter until clumps form. Place the batter in prepared loaf pan and evenly sprinkle with crumb topping. Bake for 55-60 minutes or until inserted toothpick comes out clean.
