Super Quick Chicken Ramen Noodle Soup

Chicken Ramen Noodle Soup (WLUK)


8 to 10 cups chicken stock

1 tablespoons olive oil

2 chicken breasts, diced in small pieces

1 cup shredded carrot

2 to 3 cups assorted stir fry veggies

2 cloves garlic, minced or crushed

1 tablespoon fresh grated fresh ginger

3 to 4 packages ramen noodles

Soy sauce to taste


Bring stock to a boil in a soup pot. Heat oil in a large skillet over medium-high heat until hot. Sauté chicken until browned on all sides and cooked through. Once stock comes to a boil, add sautéed chicken, carrots, veggies, garlic, and ginger to pot. Cook 2 minutes, then add ramen noodles. Simmer another 2 to 3 minutes. Add soy sauce to taste.
