Spats Fried Catfish Sandwich

Hoagie bun

1 3-5 oz piece of catfish

1 cup of all purpose breading

1 egg

1/2 cup milk

1 Tbsp cajun seasoning

1/4 tps cayenne pepper

Whisk the egg and milk together in a bowl and set aside. take the breading and mix with the cajun seasoning and cayenne pepper and blend. Put the piece of catfish in the milk mixture and then put it in the breading and pat the breading on the catfish. While you are doing this butter the hoagie and toast it. Deep fry the catfish until done about 4 minutes.

Creole sauce:

1 cup tarter

1 tbs cajun seasoning

1/4 oz tabasco sauce

combine all ingredients and whisk together.

Take your hoagie and spread the creole sauce on top of the hoagie and place your cooked catfish on hoagie and top with lettuce, tomato and onion.
