Potato Croquettes


5 lbs. leftover mashed potatoes

4 eggs

2 oz fresh chives, chopped

4 cups water

4 cups bread crumbs

4 cups flourQT 1.0 FLOUR ALL PURPOSE

Mix together the mashed potatoes, chives and eggs. Scoop into desired size and shape and freeze. Set up a breading station with the water, flour, egg wash and breadcrumbs. Pass the frozen croquettes through each step of breading and allow to thaw. In a saute pan with deisred cooking oil in it, fry them until golden brown on both sides. Serve with sauce of choice.
