Mary’s Fried Gizzards

Mary's Gizzards (WLUK)


2-3 lbs. gizzards

1 cup flour

1 1/2 tsp salt

1 tsp paprika

¼ tsp pepper




Rinse and clean gizzards. Now, either pressure cook for about 30 minutes or until fork tender. If you don’t have a pressure cooker, then use a large kettle with water and boil for 2-3 hours or until fork tender (adding hot water as needed) and removing the foam.

Combine the flour, salt, pepper, and paprika in a large baggie and mix together. In a large fry pan melt about 3 tablespoons of butter and add a little oil to it. Put some of the gizzards in the baggie (gizzards should be moist so the flour sticks to it) and shake until all are coated. Put them in the fry pan and fry for about 2 minutes per side (you just want to brown them on both sides). Drain on paper towels and can be put in a small crock pot to keep warm.
