Maple Glazed Pork & Sweet Potato Kabobs

Maple Glaze:

1 cup maple syrup

1/4 cup sriracha sauce

1 tablespoon Dijon mustard

1 tablespoon ancho chile powder

Spice Rub for Pork:

3 tablespoons ancho chile powder

1 teaspoon paprika

1 teaspoon dry mustard

1/2 teaspoon black pepper

1/2 teaspoon coriander

1/2 teaspoon cumin

1 tablespoon kosher salt


1 center cut pork loin cut into 1 inch cubes about 1 ½ pounds

2 sweet potatoes

1 onion wedged

Olive oil

Salt & Pepper

Wooden skewers soaked in water for ½ hour


Maple Glaze:

Combine all ingredients together in a mixing bowl


Mix all ingredients together for spice rub. Preheat grill to medium high heat. Pre-cook sweet potatoes in microwave or oven until 3/4 of the way cooked. Toss pork pieces in olive oil and season generously with spice rub. Cut sweet potatoes into 1” cubes (about same size as pork). Oil the sweet potatoes and onions, season with salt and pepper. Skewer the meat, potatoes, and onion. Grill kabobs on direct heat 4 – 5 minutes a side or until pork reaches internal temperature of 165 degrees glazing the skewers the last two minutes. Serve
