Instant Pot Hummus


2 cups strained chick peas (garbanzo beans)

2/3 cup tahini

1/2 -3/4 cup fresh lemon juice

2 garlic cloves, minced

1 teaspoon salt

Fresh parsley (optional)


Combine all ingredients except parsley in a food processor and purée until smooth. Add a bit of water if needed to obtain a soft, creamy consistency. Top with fresh chopped parsley if desired.

Try mixing in chopped black olives, chopped roasted red peppers or salsa to take this versatile dip to a new level of deliciousness.

Variation Ideas:


Add 1 cup black olives (or tapenade) while processing the hummus.

Roasted Red Pepper:

Add 1 cup roasted red pepper while processing the hummus.


Add 1 teaspoon cumin and 1 teaspoon honey while processing the hummus.


Use pinto beans instead of chickpeas. Add 1 tablespoon of taco seasoning (homemade is best). Top with cilantro.
