15 oz can enchilada sauce
15 oz can black beans, rinsed and drained
1 cup each shredded cheddar and shredded quesadilla cheese
Favorite Mexican toppings
Preheat oven to 375. Grease an 9 x 13 baking dish. Layer half of the torn tortillas in the bottom of the dish. Top with half of the enchilada sauce, then sprinkle all of the black beans, top with some taco season and then half of the cheese. Repeat layers - tortillas, sauce, cheese.
Carefully crack 10-12 eggs on top of the casserole. Season eggs with taco seasoning.
Bake until egg whites are fully set but yolks are still runny, about 20-30 minutes. Serve warm and top with favorite fixings.
