Festive Holiday Salad


5 to 8 ounces of salad greens

2 navel oranges peeled and cut into sections or 1 can mandarin oranges, drained

1/2 cup shelled pistachios

1/2 cup pomegranate seeds

1/2 cup crumbled goat cheese


5 tablespoons fresh-squeezed orange juice

4 teaspoons honey

2 tablespoons champagne vinegar

2 tablespoons canola oil

1 teaspoon Dijon mustard

kosher salt and freshly ground black pepper


Place greens in a large serving bowl (or divide evenly among individual salad plates). Arrange oranges, pistachios, and pomegranate over top of greens. Sprinkle with goat cheese. For dressing, whisk together orange juice, honey, champagne vinegar, canola oil, dijon mustard, salt, and pepper until the salt has dissolved and the dressing is emulsified. Dress salad just before serving, or pass the dressing at the table.
