Easy German Chocolate Cake


1 box (15 ounces) German chocolate cake mix

1 box (3.5 ounces) instant chocolate pudding

1/2 cup vegetable oil

4 large eggs

1 1/4 cup water

Coconut Pecan Frosting:

3/4 cup butter

1 1/2 cups sugar

1 can (10 ounces) evaporated milk

4 egg yolks, beaten

1 tablespoon vanilla

1 (7 oz. package) sweetened flaked coconut

1 1/2 cups chopped pecans


Preheat oven to 350 degrees. Mix the cake mix, dry pudding mix, oil, eggs and water in a large mixing bowl on low speed for one minute until combined. Beat at medium speed for two minutes more. Pour into 2 greased and floured 9 inch round pans. Bake for 25 to 35 minutes or until the cake springs back when lightly pressed. Allow to cool and remove from pans before frosting.

Coconut Pecan Frosting:

Combined butter, sugar, evaporated milk, egg yolks and vanilla in a saucepan. Cook over medium heat, stirring constantly, for about 12 to 20 minutes or until thickened. Add coconut and pecans. Cool to room temperature before frosting cake.
