Chicken Gratinee

chicken and tomatoes


2 boneless skinless chicken breast

1/4 cup seasoned bread crumbs

1/4 cup Parmesan cheese, grated

1/2 cup baby heirloom tomatoes

2 tsp balsamic vinegar

2 tsp olive oil

kosher salt


Place chicken breast in an oven safe dish. Combine crumbs and parmesan. place this mixture liberally on top of the chicken. Bake at 375 degrees for 10-12 minutes or until the thickest part of the chicken reaches 165 degrees. Cut tomatoes in half, combine with vinegar, kosher salt and olive oil. Serve on top of chicken.
