Bourbon Sriracha Glazed Bacon Wrapped Tenderloin

tenderloin bites(WLUK)


1 pound tenderloin tail

1/4 cup olive oil

2 teaspoons red wine vinegar

2 teaspoon soy sauce

1 tablespoon of Dijon mustard

1 teaspoon oregano

1 teaspoon rosemary

1/2 teaspoon of salt and pepper

1 pound raw bacon


1 cup BBQ sauce

1 ounce sriracha

2 oz Jim beam Bourbon


Beef Marinade: In a medium sized bowl, whisk together olive oil, soy sauce, red wine vinegar, Dijon mustard, oregano, rosemary, salt & pepper. Cube tenderlion tails into bite sized pieces. Place tenderloin cubes in marinade. Cover and place in refrigerator over night.

Remove cubes from marinade. Pat dry with paper towel. Wrap tenderloin with bacon and skewer with toothpick. Place bacon wrapped tenderloin cubes on lightly greased baking pan. Place baking pan in 325 degree oven for 10 to 12 mins.

In a medium size saucepan add BBQ sriracha and bourbon. Bring BBQ mixture to a summer over medium low heat and stirring occasionally. After removing bacon wrapped tenderloin cubes from oven lightly, glaze with the Bourbon Sriracha BBQ sauce.
