Smoked Salmon Crostini
- Small package of smoked salmon
- Loaf of crusty bread (artisan, baguette)
- 2 tbsp. olive oil
- 1/3 cup softened cream cheese
- 2/3 cup heavy whipping cream
- 1 tbsp. lemon juice
- 1 tbsp. horseradish sauce
- Salt and pepper
- Chives and capers (optional garnish)
Preheat oven to 400 degrees. Slice the bread into 1/4 inch thick slices with a serrated knife and place on a cookie sheet. Brush with olive oil and place in the oven for 10 minutes.
While the bread is toasting, combine cream cheese, heavy cream, lemon juice and horseradish sauce and salt and pepper with a mixer or food processor.
Once the bread is toasted, remove from olive and allow to cool for a few minutes. Spread the cream topping on a piece of bread, add a slice of salmon, and garnish with chives and capers.
