Late-summer snacks and back-to-school lunch ideas from Budding Chefs

GREEN BAY (WLUK) --The school year is just a couple of weeks away, and one of the biggest challenges beyond the homework and tests, is getting children to eat a healthy lunch while away at school. Deb Johnson of Budding Chefs in De Pere joined us at the FOX 11 Field House with some ideas for making your kids' packed lunches nutritious and delicious, as well as naturally sweet and healthy late-summer snack idea to cool off during all of this warm and humid weather.

MINI FRUIT PIZZA RECIPE:

1/2 cup Greek yogurt, plain, low fat

1 teaspoon honey

1/2 teaspoon vanilla extract

3/4 tablespoon orange juice

4 medium tortilla, whole wheat

TOPPINGS1/4 cup blackberries

1/4 cup, sliced strawberries

1/4 cup, sliced kiwi

1/4 cup mandarin oranges, canned in juice

1/4 cup grapes

Cut out your crust. We used a plain tortilla (wheat or flour) and the ring of a mason jar to make small circle crusts. Combine first 4 ingredients in a bowl and whisk until well blended. We used honey as our sweetener, but you can add a different one of your choice to taste! Lime juice can also be used in place of orange juice. Spread over tortillas and top with seasonal fruit, such as blackberries, strawberries, kiwi, mandarin oranges, grapes, or raspberries.
