GREEN BAY -- Dozens of Door County restaurants will all be in one place, serving up some of their popular dishes this weekend. Uncork Summer is back for a second year on the grounds of Wickman House in Ellison Bay. The food, wine and music festival is Saturday, June 27th from 10am - 5pm and is part of Olde Ellison Bay Days. Wickman House owner Mike Holmes and his chef Matt Chambas joined us on Good Day Wisconsin to give us a little preview. From the grill, they showcased slow cooked baby back ribs and Waseda Farm chicken drumsticks. The ribs are slow roasted in the oven and then finished on the grill with house-made Sprecher root beer BBQ sauce. For the chicken drummies, they brine them in beer and seasoning, slow cook them and then finished them on the grill with the root beer BBQ Sauce. Wickman House will also be shucking several varieties of oysters on the half shell, including St. Simon from New Brunswick and Kumamoto from Washington.
Here's the recipe for the Bobbin' Apple Cocktail:
2 oz of Laird's Apple Jack
1/2 oz. Rye Whiskey
1 oz Fresh Lemon Juice
3/4 oz. House-made grenadine (could substitute fresh cherry juice if desired)
1/2 oz. Simple Syrup
1 piece of Nueske's Bacon
Shake all ingredients (besides bacon) together. Strain into a tumbler glass with ice. Garnish with Bacon. Enjoy!
