EPHRAIM (WLUK) -- A Door County tradition is heating up for the busy season.
Fish boils are now underway and already drawing crowds.
Fresh, locally caught whitefish is boiled on an open fire, in an outdoor community-style kitchen, usually in a large metal kettle.
The chef will typically add potatoes, onion, and then white fish to the boiling water.
Experts believe fish boiling was brought to the peninsula in the late 1800s by Scandinavian immigrants who wanted to feed large groups.
Now, it's not uncommon to see it on the menu when celebrating weddings, graduations, or community gatherings.
