The Traveling Baker made a stop at the FOX 11 studio to share some easy back to school breakfast ideas for families!
Bagel and Egg Bake
6-7 eggs
1.5 cups of milk
2-3 bagels
3-4 strips of bacon (cooked and crumbled)
1/2 onion
1/2 c mushrooms
1/4 c sun-dried tomato
1 c shredded cheese
Spray the bottom of a 9 x 9 pan. Break the bagels into chunks and place in the bottom of the pan. Evenly layer the bacon, onion, mushrooms, sun-dried tomato and 3/4 c of cheese. Whisk the eggs and milk in a bowl. Add some pepper and salt. Pour the mixture in the pan and add the remaining cheese to the top. Bake at 375 for 35-40 minutes.
Cinnamon and Sugar Beer Bread
3 c flour
1/4 c sugar
3 tsp baking powder
12 oz light/pale beer
2 tbsp melted butter
cinnamon
Spray your bread loaf pan with cooking spray and sprinkle with sugar.
In a large bowl, stir the flour, sugar and baking powder. Add the beer and mix.
Pour the mixture into your load pan and sprinkle with cinnamon. Bake at 375 for 35-40 minutes. Remove and brush melted butter over the loaf, and sprinkle additional sugar on the top. Let cool.

Note: I use 2.5 cups of flour and reduce the milk to 1/2 cup. If dough is still sticky, add a little more flour.
