Amy’s Mint Melon Salad


2 tablespoons fresh lime juice

3 tablespoons honey

2 cups cantaloupe balls

2 cups honeydew balls

2 cups watermelon balls

2 to 3 tablespoons chopped mint, plus extra mint for garnish


Whisk together the lime juice and honey. In a large bowl, combine the cantaloupe, honeydew and watermelon. Add the honey-lime mixture and mint and gently toss to coat. Cover and refrigerate until ready to serve. Best if served within 24 hours. Before serving garnish with fresh mint leaves.
