Amy’s Flourless Chocolate Cupcakes
4 ounces semi-sweet chocolate chips
1/2 cup butter
2/3 cup packed brown sugar
3 eggs, beaten
3/4 cup unsweetened dark cocoa powder
Preheat oven to 375 F. Line 10 to 12 muffin cups with cupcake liners. In a microwave bowl, heat butter and chocolate for 45 seconds to 1 minute or until just melted. Whisk in brown sugar. Whisk in eggs. Sift in cocoa powder until combined. Fill each cupcake liner 2/3 full. Bake about 10 to 14 minutes. Do not over bake. Cool completely. Great served with fresh whipped cream and berries on top!
