Amy’s Cranberry Crostini



1 French baguette, cut into 1/2 inch slices

1/4 cup of olive oil

1 round of brie cheese, sliced into pieces

1 to 1 1/2 cups of cranberry sauce

1/4 cup fresh chopped Italian parsley


Preheat oven to 350 degrees. Brush a little olive oil on the top of each slice of baguette and place onto a large baking sheet. Bake 5 to 10 or until they are a light golden brown. Spread each with cranberry sauce. Top each piece with a slice of brie. Return to the oven and bake another few minutes until brie is melted. Serve right away with chopped parsley on top.
