Cooking in the kitchen with 416 Cuisine

GREEN BAY (WLUK) -- Cooking instructor and educator, Bridgett Lowery, joined us on Good Day Wisconsin to help us make some healthy and satisfying meals.

With the start to a new year, many people are trying to start on the right foot towards choosing better foods to put into our bodies.

Bridgett showed us how to make two of her healthy recipes, brown rice black bean burrito bowls and a winter salad with maple Dijon dressing.

She also offers cooking classes for children and adults as well as kitchen coaching services.

Brown Rice Black Bean Burrito Bowls:

- 2 tsp chili powder
- 1 Tbsp cumin
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp oregano
- 1/4 tsp salt
- 1 can black beans, rinsed and drained
- 2-3C cooked brown rice
- 1 can diced tomatoes with chilies
- Toppings- shredded lettuce, fresh lime, cilantro, sour cream...

Mix seasoning together and set aside. Combine rice, beans, and tomatoes with chilies in a medium sauce pan. Add seasoning and stir to combine. There is liquid in the tomatoes, but you may need to add about 1 tablespoon of water if it seems dry. Heat over medium and stir regularly. This keeps for a few days in the fridge. It also freezes well. When you are ready to eat, heat mixture and top with whatever you like!




Winter Salad with Maple Dijon Dressing:

- 3/4C extra virgin olive oil
- 1/2C apple cider vinegar, plus more to taste
- 1T Dijon mustard
- 1/2t maple syrup
- Salt and pepper to taste

Combine everything in a jar and shake well. This will keep in the fridge for about a week. This dressing heats very well. Top a salad of mixed greens, arugula, pear, apple, dried cranberries, warm pecans, and gorgonzola cheese.
