Tuna Casserole

Ingredients:

3/4 pound elbow macaroni

1 cup panko breadcrumbs

2 tbsp grated parmesan

3 tbsp olive oil

1/2 cup diced onion

3 tbsp flour

2 cup chicken stock

2 cup whole milk

salt/pepper

12 oz canned tuna, drained and flaked

1 cup frozen peas, thawed

Directions:

Cook pasta according to package directions. In a sauce pan heat 2 tbsp oil and saute onion. Once onion is soft add flour. Slowly whisk in broth and milk. Stir in pasta, tuna, and peas. Season with salt

and pepper. Transfer mixture to a greased 9x13 pan. Mix panko with parmesan cheese and 1 tbsp oil. Top tuna dish with panko. Bake at 425 degrees for 15 minutes or until the top is golden.
