Sweet Potato and Kale Hash

Sweet Potato Kale Hash

For the Sweet Potatoes:

1 cup Sweet Potatoes, diced

1/2 tsp Cinnamon

1/2 tsp Nutmeg

1/4 tsp Cayenne Pepper

2 tbsp Butter, Melted

Pinch White Pepper

For the Kale:

1 cup Kale, Chopped

2 oz Chicken Stock

Pinch Salt

Pinch Black Pepper

1 each Duck Egg

1 Andouille Sausage

Directions:

For the sweet potatoes, you will want to first melt your butter. Once melted add the seasonings to your butter and mix well. Once mixed well pour contents over the diced sweet potatoes and toss until completely coated. Then spread sweet potatoes onto a spread baking sheet and bake in a oven at 350 degrees for 25 minutes.

For the kale, you will start by sautéing in 1 tbsp of butter in a pan. Once the kale starts to wilt you will then add your chicken stock and salt and pepper and let simmer. Once the kale becomes tender it will be done. Once the sweet potatoes and kale are done you can then combined them together.

For the duck egg you will want to melt 1 tbsp of butter of low heat. Once melted you will crack your egg into the pan and cook it slowly so it doesn’t brown. Once the whites are cooked completely across the bottom of the pan you will then add 2 ounces of water, turn your heat to high, and cover for 2 minutes. While your egg is covered you can grill your andouille.
