Stuffed French Toast with Mandarin Peach Sauce

Stuffed French Toast

Ingredients for filling:

12 oz cream cheese
1/4 cup chopped pecans
1/4 cup apricot jam
1 tsp orange jam
Hearty Italian style bread of choice, sliced

Combine first four ingredients and spread between two slices bread. Place filled bread in buttered 9 x 13 baking dish.

Ingredients for batter:

9 eggs
1 cup orange juice
1 cup milk
1/3 cup triple sec
dash of salt
1 tsp vanilla
3 Tbsp sugar

Blend ingredients together and pour over toast. Let sit in fridge overnight or at least 3-4 hours before baking. Bake at 350 degrees for about 45 minutes or until toast is cooked through. Let sit for five minute before serving.

Ingredients for sauce:

1 lb frozen peach slices
1/2 cup apricot jam
11 oz can mandarin oranges with juice
2 Tbsp corn starch
2 Tbsp triple sec
1/3 cup sugar

Bring first three ingredients to a boil. Next, mix corn starch and triple sec together and add to boiling peach mixture to thicken. Stir in sugar and it's ready to serve over top fresh baked french toast.
