Stuffed French Toast
Ingredients for filling:12 oz cream cheese1/4 cup chopped pecans1/4 cup apricot jam1 tsp orange jamHearty Italian style bread of choice, slicedCombine first four ingredients and spread between two slices bread. Place filled bread in buttered 9 x 13 baking dish.Ingredients for batter:9 eggs1 cup orange juice1 cup milk1/3 cup triple secdash of salt1 tsp vanilla3 Tbsp sugarBlend ingredients together and pour over toast. Let sit in fridge overnight or at least 3-4 hours before baking. Bake at 350 degrees for about 45 minutes or until toast is cooked through. Let sit for five minute before serving.Ingredients for sauce:1 lb frozen peach slices1/2 cup apricot jam11 oz can mandarin oranges with juice2 Tbsp corn starch2 Tbsp triple sec1/3 cup sugarBring first three ingredients to a boil. Next, mix corn starch and triple sec together and add to boiling peach mixture to thicken. Stir in sugar and it's ready to serve over top fresh baked french toast.
