      Spinach and Bacon Bites


      Ingredients:

      1 (10 ounce) package of fresh baby spinach, cut in ribbons

      1 onion, diced

      2 cloves garlic, minced

      1 tablespoon butter for cooking above ingredients

      8 ounces of bacon, cooked and torn in small pieces

      1 cup flour

      1 teaspoon salt

      1 teaspoon baking powder

      2 eggs

      1 cup of Lamers Dairy Dairyland’s Best whole milk

      2 tablespoons butter, melted

      1 (8 ounce) package of Italian blend or other shredded cheese of your choice

      Pepper to taste

      Directions:

      Preheat oven to 375 degrees. Grease a 9 x 13 baking dish with butter.

      Melt 1 tablespoon of butter in a large fry pan. Add onions, garlic and a sprinkle of salt and cook for a minute or so on medium high heat. Add spinach and cook to wilt spinach and cook onions through. Do not color. Turn off heat and stir in cooked bacon.

      In a medium bowl whisk together eggs, Lamers Dairy Dairyland’s Best whole milk and melted butter.

      In a separate large bowl, whisk flour, baking powder, salt and pepper together. Add egg and milk mixture. Add cheese and stir. Finally incorporate spinach and bacon mixture.

      Spread into the greased 9 x 13 pan and bake at 375 degrees for approximately 30 minutes or until top is golden.

      Serve warm.

      Makes approximately 50 one inch square bites.
