      Spinach and Bacon Bites
      Ingredients:1 (10 ounce) package of fresh baby spinach, cut in ribbons1 onion, diced2 cloves garlic, minced1 tablespoon butter for cooking above ingredients8 ounces of bacon, cooked and torn in small pieces1 cup flour1 teaspoon salt1 teaspoon baking powder2 eggs1 cup of Lamers Dairy Dairyland's Best whole milk2 tablespoons butter, melted1 (8 ounce) package of Italian blend or other shredded cheese of your choicePepper to tasteDirections:Preheat oven to 375 degrees. Grease a 9 x 13 baking dish with butter.Melt 1 tablespoon of butter in a large fry pan. Add onions, garlic and a sprinkle of salt and cook for a minute or so on medium high heat. Add spinach and cook to wilt spinach and cook onions through. Do not color. Turn off heat and stir in cooked bacon.In a medium bowl whisk together eggs, Lamers Dairy Dairyland's Best whole milk and melted butter.In a separate large bowl, whisk flour, baking powder, salt and pepper together. Add egg and milk mixture. Add cheese and stir. Finally incorporate spinach and bacon mixture.Spread into the greased 9 x 13 pan and bake at 375 degrees for approximately 30 minutes or until top is golden.Serve warm.Makes approximately 50 one inch square bites.
