      Spanish Chicken with Tomatoes and Olives

      Ingredients:

      3 ea chicken breasts, butterflied

      1 can chopped tomatoes with chilies, mild

      1/2 cup chopped green olives with pimentos

      2 slices of prosciutto, sliced into thin strips

      1/4 cup sliced yellow onion

      2 cloves garlic, smashed and chopped

      mix of smoked paprika, black pepper and kosher salt

      Directions:

      Heat a saute pan over medium high heat, add in 2T olive oil. Season chicken with the smoked paprika mix and lay in the pan, cook turning after 2-3 minutes.Add onions, tomatoes and olives, cover and simmer for 3-4 minutes to combine flavors.Remove cover add the prosciutto, stir in. serve over couscous.For coucous follow directions on box.
