      Salmon Salad with Basil Prosecco Vinaigrette

      Ingredients:4 oz Salmon1/2 cup mixed greens, trimmed and Cleanedpickled red onion8 pcs oranges segmentedRadish slices, thinly slicedToasted PistachiosBasil Prosecco Vinaigrette:1/2 cup Champagne Vinaigrette1/2 cup Prosecco1 cup Basil1/2 cup Parsley1 Shallot3 Cloves Garlic4 cups Salad Oil1 tsp Dijon Mustard1 tsp HoneySalt and pepperTo make Vinaigrette: In a blender place basil, parsley, garlic, shallot, mustard, honey, Prosecco and champagne vinegar cover blender and blend. You want to pick a medium speed then slowly start adding your salad oil. Finish with a pinch of salt and pepper.To assemble salad:Grill salmon, seasoned with salt, pepper and parsley. While grilling salmon toss your greens with the prosecco vinaigrette and a touch of salt. Add oranges, radish, pickled red onions, and pistachios to top of salad. When the salmon is finished cooking place and top of salad and enjoy.{}
