2 3/4 cup all purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup sugar
15 ounce container of whole milk ricotta
1/2 cup butter
1 tsp vanilla
Combine ricotta, butter and sugar and cream together. Add eggs and vanilla and mix well. Combine flour, baking powder and salt. Whisk together and add to the ricotta mixture. Mix just until dough form. Use a small scoop to form cookies and place on parchment lined baking sheet. They will not spread, so you do not need to leave much room between. Bake at 325 degrees for 8-9 minutes, until done. Let cool completely and dip in powder sugar glaze. For glaze, mix- 1 C powdered sugar with 2 T milk and a dash of vanilla and a pinch of salt. You may need to add a bit more milk to get desired consistency.
