Quick Rice and Sausage Burrito
3 slices bacon diced
1/4 cup onion, diced
Crushed garlic clove
1 package precooked spicy chicken sausage
1 cup rice
2 cups chicken broth
1 teaspoon smoked paprika
Chopped fresh cilantro
Squeeze of lime
1 can rinsed and drained black beans
Toppings: shredded Colby jack or cheddar, sour cream, salsa
In a sauce pan saute the bacon until it makes some fat to saute the onion and sausage for two minutes. Add the garlic for last minute. Add the rice and stir. Pour in the chicken broth and add the beans. Bring to boil. Cover pan, reduce heat and cook about 15 minutes. Sprinkle with cilantro. Squeeze lime over mixture.
Serve the rice mixture in warm tortilla. Add your favorite toppings.
