Potatoes Ole



3 to 4 large baking potatoes, washed and dried

1/4 to 1/2 cup olive oil

Salt and pepper

1 to 2 cups shredded cheddar cheese

½ cup salsa

1/2 cup diced green pepper

1 small can sliced black olives

Sour cream for dipping


Slice potatoes lengthwise into several 1/4 inch thick slices. Coat potatoes on both sides with olive oil and season with salt and pepper. Grill over direct medium heat for 5 to 7 minutes on each side, brushing occasionally with more oil. Top each slice with some cheese, a little salsa, a few peppers and olives. Grill another minute or two until cheese is melted. Serve with sour cream for dipping.
