Ingredients:1/4 cup mayonnaise1/3 cup pesto2 tablespoons fresh lemon juice4 cups cubed skinless, boneless rotisserie chicken breast1 cup diced celery1/4 cup toasted pine nuts (optional)Salt and pepperDirections:Whisk first three ingredients together in a large bowl. Stir in chicken, celery, and nuts. Season with a little salt and pepper. Chill for a few hours before serving. If mixture gets a bit dry add a little more mayo. Great served in wraps or crusty bread with romaine lettuce, roasted red peppers, and shredded Parmesan cheese.
