Mushroom Turkey Meatloaf
1 cup onions, chopped
2 cups mushrooms, chopped
3 teaspoons fresh thyme
1 ½ lbs. ground turkey
1 cup breadcrumbs
¼ cup chicken stock
¾ cup ketchup, divided
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 tablespoon brown sugar
Salt & pepper
Preheat oven to 350 degrees.
Heat olive oil in a sauté pan over medium low heat.
Cool onion and thyme for 5 minutes, stirring occasionally. Add mushrooms and sauté until onions are translucent. Remove from heat and cool.
Combine turkey, bread crumbs, egg, ¼ cup of the ketchup, Worcestershire sauce, salt and pepper. Add onion & mushrooms and mix gently.
Cover sheet pan with aluminum foil, shape meatloaf into a rectangular loaf on a sheet pan.
In a small bowl mix remaining ketchup, Dijon mustard and brown sugar, then spread on top of the loaf.
Bake for 45 – 55 minutes. (Internal temp should be 165) Remove from oven and let rest for 5 minutes before serving.
Serve hot, at room temperature, or cold in a sandwich.
