      Lobster Roll and Celery Root Slaw

      Lobster Salad Ingredients:

      1 Lb Cooked lobster meat, chopped

      1 ½ Cups Mayonnaise

      2 lemons, zest and juice

      1 lime, zest and juice

      1 orange, zest and juice

      2 tablespoons parsley, minced

      2 stalks celery, small diced

      Salt to taste

      Combine the lemon, lime and orange zest and juice with the mayonnaise. In a large bowl incorporate the citrus infused mayonnaise with the lobster meat, add the celery, parsley and mix until all ingredients are evenly combined. Season with salt.

      Celery Root Slaw:

      2 medium celery root bulbs

      2 stalks celery, thinly sliced

      ½ cup, Blue cheese dressing

      2 ounces, crumbled blue cheese

      1 lemon, juiced

      2 tablespoon, chopped chives

      Salt and pepper, to taste

      Wash the celery root free of any dirt and peel. Cut the celery root into quarters and shred the celery root using a cheese grated or food processor with a grating attachment. Combine all the ingredients and mix until evenly incorporated. Season with salt and pepper.
