Italian Herbed Vegetable Bruschetta

Italian Herbed Vegetable Bruschetta thumbnail


1 loaf of good country bread, sliced 1/2 inch

1/2 cup basil leaves

1/2 cup cilantro

1/2 cup parsley

2T lemon juice

2T water

1 clove of garlic

4tsp olive oil

1 medium zucchini, cut into 1/2 inch thick rings

1 bunch asparagus, snapped

1 medium yellow squash cut into 1/2 inch rings

1 large tomato, cut in half

2T balsamic vinegar


Take the herbs, garlic, water and lemon and in a small food processor add 2 tsp oil and mix well.

Place veggies in a bowl and toss with marinade, let sit 20 minutes will the grill gets hot.

Place on grill and cook for 3-5 minutes or until softened and cooked through, remove from the grill and place in a bowl, cover and let sit for a minute.

Rub the bread slices with garlic and drizzle with oil, place on grill and cook until toasted on both sides. Arrange on a platter, take veggies and rough chop, add balsamic to the juices. Top bread with chopped veggies and drizzle with juices. If wanted sprinkle fresh parmesan over.
