Healthy Holiday Snacks from Dr. Lynn Wagner

Yogurt Dressing:

1 cup whole fat plain yogurt

optional 1/4 cup mayo

Spices you desire:

1 tsp garlic powder

1/2 tsp onion powder

1 tsp dill

1/4 tsp each black pepper and salt

dash of cayenne pepper

Bean Dip:

2 cups strained chick peas (garbanzo beans)

2/3 cup tahini

1/2 to 3/4 cup fresh lemon juice

2 garlic cloves, minced

1 teaspoon salt

Fresh parsley (optional)

3 cups beans of your choice (canned or hydrated dry beans)

2 tablespoons fresh lime juice (about 1 lime)

1 to 3 cloves of garlic, chopped

1/2 cup onion, chopped

1 to 2 jalapeño peppers, chopped with stems and seeds removed (optional)

1/2 teaspoon cumin or a combination of 1/4 teaspoon cumin and 1/4 teaspoon chili powder

1/3 cup cilantro, chopped

1/2 to 1 teaspoon salt (start with 1/2 teaspoon and add more at end as needed)

Directions:

Sauté onion, garlic and jalapeño peppers in olive oil until soft (about 8 to 10 minutes). Combine with remaining ingredients in a food processor or powerful blender until combined. Add extra lime juice or water until you get desired consistency (slightly thicker than hummus). Adjust salt to your preference. Bean dip is so simple yet so delicious! Try serving it with seedy oat crackers - you’ll love it.

Raw Brownies:

Step 1:

2 1/2 cups pitted dates

1 1/2 cups walnuts

6 tablespoons cacao powder

1 1/2 teaspoons vanilla

1/4 teaspoon salt

Step 2:

1/4 cup cacao powder

1/4 cup pure maple syrup

2 tablespoons melted coconut oil

1/2 teaspoon vanilla

Directions:

Combine ingredients from Step 1 in food processor. Place in an 8-inch square baking pan lined with parchment paper or greased. Combine ingredients in Step 2 in a mixing bowl until a paste forms. Spread over brownie base from Step 1. Refrigerate for 2 hours until set.
