Gourmet Grilled Cheese

For the marinated tomatoes:

In a mixing bowl add:

1/4 cup balsamic vinegar

1 tsp. Dijon mustard

1/2 tsp. dried oregano

1/2 tsp. dried basil

1/2 tsp minced fresh garlic

1/2 tsp. sugar

pinch salt and pepper

Whisk ingredients together. While whisking, slowly add in a steady stream:

2/3 cup extra virgin olive oil

Slice 2 large, fresh beefsteak tomatoes, add the slices to the marinade.

To assemble Grilled Cheese:

Heat a large non stick skillet over medium heat. Butter one side of 4 slices of thick cut white or wheat bread. When the skillet is hot, place all four slices in the pan (butter side down), then top two slices with sliced brie cheese and sliced American cheese. Top the other two slices with sliced Swiss Cheese and Sliced Sharp cheddar cheese. Make sure the heat is not too high or the bread will burn and the cheese will not melt. On the two slices with the brie and American cheese, add a small amount of fresh arugula, then top with two sliced, marinated tomatoes. Place the the grilled bread with the Swiss/cheddar combo on top of the marinated tomatoes. Press lightly to hold together, cut in half or quarters and serve with Tomato Soup - Enjoy!
