Ingredients:3/4 cup vegetable oil3/4 cup sugar1 tsp vanilla1 egg1/2 tsp red food color1 Tbsp dutch cocoa1/4 tsp salt3/4 tsp xanthan gum1 1/4 cup gluten free flour1/2 cup buttermilk3/4 tsp baking soda1 tsp vinegarDirections:Mix your oil and sugar together add your eggs and vanilla mix well. And your cocoa and food coloring. Mix until well blended then add your flour and Xanthan gum mixture alternating with your buttermilk. Add your vinegar to your baking soda then add it to your mixture scoop into your cupcake pan and bake for approximately 18 minutes.Frost with your favorite vanilla or cream cheese frosting.
