French Onion Mashed Potatoes
3 lbs. potatoes, peeled and cut into chunks
Salt and pepper (optional)
1/4 cup milk
1 container (16 ounces) prepared French Onion Dip
1 container (2.8 ounces) French fried onions
Place in large pan and cover with water. Bring to a boil and cook until tender, about 20-25 minutes.
Drain potatoes and return them to the cooking pan. Place pan back on low heat and stir potatoes for a minute to dry them out a bit. Season with a little salt and pepper if you like and mash. Stir in milk and onion dip and mix well.
Spoon potatoes into a casserole dish that has been sprayed with cooking spray. Cover with foil and bake in a preheated 350 degree oven for 20 to 30 minutes. Uncover. Sprinkle onions on top and bake another 5 to 10 minutes or until potatoes are heated and onions are golden.
