Edamame Hummus

Edamame Hummus

Ingredients:

2 cups edamame (thawed)

¼ cup tahini

¼ cup water

Zest of 2 lemons

Juice of 2 lemons

1 clove garlic

Pinch of salt and pepper

Pinch of cumin

Pinch of coriander

1/4 cup virgin olive oil

Handful of Italian parsley

Directions:

In a food processor puree all the ingredients together until it forms a paste. Serve on rice cracker, toasted pita chips or with raw vegetables.
