Cranberry Walnut Biscotti

1 3/4 cup all purpose flour
1 1/2 tsp baking powder
pinch of salt
1/4 cup butter, melted and cooled slightly
1/2 cup sugar
1 tsp vanilla
2 eggs, slightly beaten
1/2 cup total of dried cranberries and walnuts
Combine the dry ingredients and set aside. (first three ingredients) Combine the wet ingredients with a whisk. Add the walnuts and cranberries to the wet ingredients and mix. Add the dry ingredients to the mixture and combine well. Once, you have combined with a spoon, you may want to mix with your hands until a dough forms. Shape into a flat rectangle on a parchment lined baking sheet and bake at 350 degrees for about 12 minutes, until the dough is par baked. Once it is cool enough to handle, cut into 1/2 inch pieces and place cut side up on baking sheet. Bake for 6-8 minutes, flipping the pieces half way. Let cool and place in airtight container for up to one week.
