Country Fried Steak and Gravy

For the Gravy:

1/4 cup bacon fat

2 oz Shallots

2 oz Garlic

1/4 cup diced onion

1/4 cup flour

2 cup milk

6 oz beef sausage

1 Tbsp dried sage

Salt and pepper to taste

Direction:

Sweat onions, shallots and garlic in bacon fat. Add flour and make a roux. Add milk, sage and beef. Simmer until thickens into a gravy. To make red eye, add 1/4 cup roasted tomatoes, 1/2 cup black coffee and 2-3 dashes of tobacco. Season with salt and pepper to taste.

For the Steak:

6 oz portion of bottom round sirloin

Panko bread crumbs

All Purpose flour

Egg wash

House Spice or seasoning salt

Direction:

Pound out sirloin very thin, lightly season with salt and pepper. Dip sirloin in flour and lightly coat, transfer to egg wash and then transfer to panko (lightly season panko with a little house spice). Heat saute pan with 1/2 inch of canola oil, and fry steak for a couple minutes on both sides or golden in color. Transfer steak to a plate, top w/ Red Eye Gravy and 2 eggs however you like them!
