      Cool Cucumber Salsa

      Ingredients:2 medium cucumbers - peeled, seeded, and chopped2 medium tomatoes, chopped1/2 cup chopped sweet red pepper1 Jalapeo pepper, seeded and minced1 small red onion, chopped1 clove garlic, mincedJuice from 1 small lime1 tablespoon minced parsley1/4 cup cilantro leaves chopped1 tablespoon chopped dill weedDash of salt and pepperDirections:In medium bowl, combine all ingredients until thoroughly mixed. Cover and refrigerate for 1 hour.Tip:In lieu of chips, serve this salsa on chopped slices of fresh garden produce such as zucchini or other summer squash, and garden fresh cucumbers.The salsa makes a great accompaniment to grilled pork, steak, or chicken.
