2 tbsp olive oil
2 yellow onions medium diced
2 green bell peppers medium diced
2 yellow bell peppers medium diced
2# diced tomatoes
1 tbsp chopped garlic
1/2 cup chopped jalapenos
2 cups cooked black beans
1 tbsp ground cumin'
3 tbsp light chili powder
When using to make soup:
8 oz browned ground beef, chicken, or steak
1-2 cups of tomato juice
salt as needed
In a large sauce pot heat the olive oil and add in the bell peppers, jalapenos, and onions.
When the peppers and onions begin to soften add in the chopped garlic cook for another minute or so.
Add in the tomatoes and black beans.
Mix in the seasonings and remove from heat.
Allow the mix to cool and portion into 1# portions in either a freezer bag or freezer safe container.
Freeze the chili base.
When you want to use it, add 2# of the mix to 8 oz of your favorite meat.
Add 1 to 2 cups of tomato juice depending on how thick or thin you like it.
Season with a pinch or to of salt.
