      Charred Corn Salad

      Ingredients:4 ears of corn1/2 ea red bell pepper1/2 cup cherry tomatoes2T red onion, minced2 each scallions, sliced thin1/2-1 canned chipotle chili minced1T lime, juice2T olive oil1/4tsp sugar1/4 tsp cumin1/4tsp Kosher saltDirections:Heat grill over medium high, lightly oil corn and place on grill turning as it browns, cook for 18-20 minutes, remove from grill and cut corn off the cobb and mix with remaining ingredients, season with a little more salt or lime juice as needed.Can be served with grilled pork, chicken, shrimp or steak.
