Charred Corn Salad

Charred Corn Salad (WLUK)


4 ears of corn

1/2 ea red bell pepper

1/2 cup cherry tomatoes

2T red onion, minced

2 each scallions, sliced thin

1/2-1 canned chipotle chili minced

1T lime, juice

2T olive oil

1/4tsp sugar

1/4 tsp cumin

1/4tsp Kosher salt


Heat grill over medium high, lightly oil corn and place on grill turning as it browns, cook for 18-20 minutes, remove from grill and cut corn off the cobb and mix with remaining ingredients, season with a little more salt or lime juice as needed.

Can be served with grilled pork, chicken, shrimp or steak.
