1 cup packed dates, pitted

1/4 cup honey

1/4 cup creamy peanut butter

1 cup almonds, loosely chopped

1/2 cup dried blueberries

1 1/2 cups rolled oats, toasted (dry bake in a 350 degree for 15 minutes)


Process dates in a food processor for about one minute. It will form a dough like consistency. In a small pan or microwave heat honey, peanut butter, and dates. Add almond, blueberries, and oats. Mix well. Transfer mixture to a parchment lined 8 inch baking pan. Press down. Cover with plastic and chill for 20 minutes or until firm. Remove from pan, cut and store in airtight container for up to 1 week. These bars also freeze well.
