Blueberry Arugula Salad with Lemon Honey Dressing

Lemon Arugula Salad


5 ounces arugula

1 cup fresh blueberries

1/2 cup sliced almonds, toasted

1/2 cup crumbled feta or goat cheese

3 tablespoons lemon juice (from 1 large lemon)

1 teaspoon lemon zest

1 1/2 tablespoons honey

4 tablespoons canola oil

1/4 teaspoon kosher salt

1/2 teaspoon fresh thyme (optional)


In a blender, blend lemon juice, lemon zest, honey, oil, salt. Blend until well combined. Add fresh thyme to the dressing. Combine the arugula, blueberries, almonds, and feta in a large bowl.

When ready to serve, drizzle dressing on salad and toss.
