      Black Bean Salad

      Ingredients:

      2 cups quinoa, cooked

      2 cups black beans, drained and rinsed

      the juice of one lime

      1/2 cup red onion, chopped

      1 cup cherry tomatoes, halved

      1/2 cup green pepper, diced

      1 cup corn

      2 Tbsp cilantro, chopped

      2 Tbsp chipotle salsa

      1 tsp chili powder

      1 tsp ground cumin

      salt and pepper to taste

      Directions:

      Combine all ingredients. Season and chill for 30 minutes. Serve.
