BBQ Ribs from Zozo's Kitchen

1 rack of extra meaty ribs
BBQ Rub (below)
BBQ Sauce (below)
1/2 stick of butter
Set up your BBQ to run at 275 F with indirect heat. Pull the ribs out of refrigerator, and let come to room temperature. Score the back of the ribs, and remove the silver skin. Rub the ribs generously with the rub, get as much on as possible. When BBQ is ready, set the ribs on your BBQ for indirect heat. Cook them for 3 hours making sure that the fire stays constant. After 3 hours, pull ribs out of smoker and place on bed of aluminum foil. Rub the butter on the ribs, and a very light coating of sauce. Seal the foil. Place ribs back on smoker for 1 hour. After the hour, pull the ribs, and let rest for 20 minutes wrapped. Enjoy!
1/2 cup Paprika
6 tablespoons kosher or sea salt
6 tablespoons brown sugar
2 tablespoons cumin (fresh toasted & ground preferred)
3 tablespoons ancho chili powder (regular store bought ok also)
2 tablespoons fresh cracked pepper
1 tablespoon cayenne pepper
Combine all ingredients in air tight container and shake until well blended.
2 cup ketchup
1/2 cup molasses
1/2 cup dark brown sugar
1/2 cup apple cider vinegar
1/4 cup yellow mustard
3 tablespoon Worcestershire sauce
1 tablespoon garlic powder
1/4 tsp ground black pepper
1/2 tsp Louisiana hot sauce
Combine all ingredients in a pot, and warm on low for 15-20 minutes stirring occasionally.
