Bone in chicken pieces cut up
BBQ Chicken rub (recipe below)
BBQ sauce (recipe below)
Set up your BBQ to run at 275 degrees with indirect heat. Pull the chicken out of refrigerator, and let come to room temperature. Rub the chicken generously with the rub. When BBQ is ready, set the chicken on your BBQ for indirect heat. Cook them for 2-3 hours looking for an internal temperature of 160 degrees, making sure that the fire stays constant. Startup charcoal/gas grill to medium heat. Once at chicken is 160, pull chicken off, and place skin side down on medium grill. Grill for 5 minutes to get skin extra crispy. After 5 minutes take off the grill and enjoy, if you like sauce put a thin layer of sauce on, cook another 3-4 minutes to warm.
BBQ Chicken Rub:
1/2 Cup Paprika
6 tablespoons kosher or sea salt
6 tablespoons brown sugar
6 tablespoons lemon pepper seasoning (salt free preferred)
2 tablespoons cumin (fresh toasted & ground preferred)
3 tablespoons ancho chili powder (regular store bought ok also)
2 tablespoons fresh cracked pepper
1 tablespoon cayenne pepper
Combine all ingredients in air tight container and shake until well blended.
2 cup ketchup
1/2 cup molasses
1/2 cup dark brown sugar
1/2 cup apple cider vinegar
1/4 cup yellow mustard
3 tablespoon Worcestershire sauce
1 tablespoon garlic powder
1/4 tsp ground black pepper
1/2 tsp Louisiana hot sauce
Combine all ingredients in a pot, and warm on low for 15-20 minutes stirring occasionally.
