Banana Bread with Banana Cream Cheese Frosting

2 eggs, beaten

1/3 cup buttermilk

1/2 cup vegetable oil

1 cup mashed bananas

1 1/2 cups white sugar

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt


Preheat oven to 325 degrees. Spray one 9x5 inch loaf pan with non-stick spray coating. Blend together the eggs, buttermilk, oil and bananas. Sift together the sugar, flour, baking soda and salt. Add to banana mixture.Mix well. Pour into prepared loaf pan and bake 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. Invert on to a plate. Let cool and frost with Banana Cream Cheese Frosting if desired.

Banana Cream Cheese Frosting:

1 block (8 ounces) cream cheese, softened

1 stick butter, softened

1 banana, mashed

1/2 teaspoon vanilla

1 1/2 to 2 cups powdered sugar

1 tablespoon milk

Use a mixer to beat together butter, cream cheese, banana and vanilla. Beat for a couple minutes. Gradually, add in powdered sugar and a little milk until the desired consistency. Spread on cooled bread.
