      Banana Bread with Banana Cream Cheese Frosting

      Ingredients:2 eggs, beaten1/3 cup buttermilk1/2 cup vegetable oil1 cup mashed bananas1 1/2 cups white sugar1 3/4 cups all-purpose flour1 teaspoon baking soda1/2 teaspoon saltDirections:Preheat oven to 325 degrees. Spray one 9x5 inch loaf pan with non-stick spray coating. Blend together the eggs, buttermilk, oil and bananas. Sift together the sugar, flour, baking soda and salt. Add to banana mixture.Mix well. Pour into prepared loaf pan and bake 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. Invert on to a plate. Let cool and frost with Banana Cream Cheese Frosting if desired.Banana Cream Cheese Frosting:1 block (8 ounces) cream cheese, softened1 stick butter, softened1 banana, mashed1/2 teaspoon vanilla1 1/2 to 2 cups powdered sugar1 tablespoon milkUse a mixer to beat together butter, cream cheese, banana and vanilla. Beat for a couple minutes. Gradually, add in powdered sugar and a little milk until the desired consistency. Spread on cooled bread.
